Baking has always been a passion of mine since I was a small girl. At 8 years old I stole some apples from the neighbors orchard, carried them home in my skirt and made my first apple pie from scratch by myself. After that I made all the birthday cakes in our family except when my brother, also a fabulous chef, would weasel in.

Years later my family opened a restaurant and catering business, which is where I learned the professional skills of baking. Determined not to inherit the restaurant business I went to art school and then moved to NYC. It didn't take long for me to combine my business/food knowledge with my art background and I started Gail Watson Custom Cakes in 1988.

Over these many years I've cracked countless eggs and met so many wonderful and happy brides. My experience has also landed me in every bridal magazine, on many movie sets, in some of the most beautiful books and on some incredible TV shows, but none of that has been as important as working with the individual bride and creating another perfect aspect of her most important day.

I have always tried to pay very close attention to what my clients' needs and wishes are. A Simple Cake was created out of just that. More and more often, as much as the gloriously decorated cakes with a garden of hand molded sugar flowers on them were desired, budget and style concepts lead so many brides to say they wanted a delicious cake and a "simple cake", not plain, not without style or quality, but simple elegance.

The website was also designed to make ordering your cake easy and stress free. Our desire is to make this process as smooth and sweet as our icing so you can have more time to focus on some of your other planning details.
